The Bee and I were watching The Pioneer Woman’s cooking show a while ago and she was making lunch for her family. The food she made was plentiful and simple but looked so delicious and filling. Naturall I was able to get a copy of The Pioneer Woman Cooks: Come and Get It!: Simple, Scrumptious Recipes for Crazy Busy Lives from the library and lucky me! It was being discarded so I was able to add this book to my collection.
Like her examples on the show, the recipes shared are easy to follow and recreate. One of the things that I enjoy about this book are the step by step photos of how to create the meals. Having an idea of what to anticipate during each step of the food prep allowed me to relax and enjoy how the process instead of worrying about what I may have been doing incorrectly.
We made her smothered pork chops and the recipe took less than an hour to prepare! (Clean-up is another story but this is why I have a dishwasher!).
The idea of smothered anything was daunting. I cannot really say WHY but I had it in my mind that this was going to be a difficult dish to create. WRONG! The meat was tender and juicy, lightly battred and fried, and the veggies were firm and crisp.
We used purchases from the Farmer’s Market – peppers and substituted scallions for onions and it was a good feeling not wasting produce. We also used vegan butter to make this dairy free for The Bee and spices from Penzey’s for flavor.
When I make this again, I will chop the veggies into smaller pieces.
This was a simple meal and writing about is making me ready for dinner!
