With the variety of food restrictions in our home, finding sweet treats for all of the members of our home can be tricky. After The Bee came home and started talking about shortbread, I knew that was something that I needed to make.
I struggled to find a recipe that would provide a flaky, buttery cookie that would satisfy. Since October is Cookbook Month, we used a recipe from Magnolia Table, and Barlean’s Coconut Oil to create a dense cookie that is buttery and dairy free.
Barlean’s Organic Butter Flavored Coconut Oil is a great alternative for the butter we needed. The coconut flavor is mild and does not overpower the buttery sweetness of the cookie.
This recipe was a bit more involved than our usual Shortbread but totally worth it. I’m not sure how long they are supposed to last, my family are all of the cookies as soon as they were cooled off!
