Swiss Chard Scramble

What happens when you get some Swiss Chard from the garden, add eggs and fresh herbs? It becomes a delicious combination for a quick and tasty breakfast.

  • 1 tbsp olive oil
  • 3 Eggs
  • 1 yellow onion Chopped
  • 1 clove garlic Minced
  • Salt and Pepper To taste
  • fresh oregano To taste
  • fresh chives To Taste
  • 2 tbsp Parmesan cheese
  • 1 tsp water For mixing in the eggs
  • Swiss Chard Stems removed

  • 1 tsp water For mixing in the eggs
  • Swiss Chard Stems removed
Instructions
  1. Add olive oil in a pan and let it heat. Chop onion and garlic. Add to pan with salt and pepper.
  2. Remove the stems from the Swiss Chard.
  3. Add Swiss Chard and herbs to pan. Lower heat to medium to avoid burning. Note: I soaked my herbs and vegetables in a mixture of vinegar and water to remove dirt from the garden. Rinse WELL before using.
  4. In a separate bowl, mix eggs with water and parmesan cheese. I like to add water instead of milk because water works just as well when giving the eggs a fluffiness. Add egg mixture to the pan.
  5. This is the step that requires the most watching. Constantly stir the mixture to ensure that it does not burn and that you cook the eggs through completely.
  6. 6. Remove from heat, plate, and enjoy. Some options for this dish: Stir in any green leafy vegetable. I tried this with kale and the taste was more crunchy but just as delicious. This can also be enjoyed with a side of meat (The Boy had bacon with his meal), or a side of toast.
