Instructions
-
Add olive oil in a pan and let it heat. Chop onion and garlic. Add to pan with salt and pepper.
-
Remove the stems from the Swiss Chard.
-
Add Swiss Chard and herbs to pan. Lower heat to medium to avoid burning. Note: I soaked my herbs and vegetables in a mixture of vinegar and water to remove dirt from the garden. Rinse WELL before using.
-
In a separate bowl, mix eggs with water and parmesan cheese. I like to add water instead of milk because water works just as well when giving the eggs a fluffiness. Add egg mixture to the pan.
-
This is the step that requires the most watching. Constantly stir the mixture to ensure that it does not burn and that you cook the eggs through completely.
-
6. Remove from heat, plate, and enjoy. Some options for this dish: Stir in any green leafy vegetable. I tried this with kale and the taste was more crunchy but just as delicious. This can also be enjoyed with a side of meat (The Boy had bacon with his meal), or a side of toast.
